After being forced to flee the ongoing war in her home country, a Ukrainian woman is celebrating her new life in Kelowna and the second anniversary of her unique food store.
and her family left everything behind in 2022, when their home was threatened by the Russian invasion of Ukraine.
During the period of change and hardship that followed their hurried move, Kopets found solace and a sense of normalcy in cooking familiar meals for her children.
As a businesswoman and mother, Kopets said she needed to figure out a way to provide for her family, and make a positive impact on her new community.
In 2023, Kopets opened in downtown Kelowna. Then, in 2024, she expanded and opened a second location at Kelowna's Orchard Park Mall.
The business is a popular chain in Europe, where people can purchase handmade, frozen meals that are ready to be put in the oven. The food – which includes a rotating menu of perogies, crepes, cabbage rolls, soups and pie – is hand-made in store with fresh, local ingredients.
Now, to commemorate the two year anniversary of Ready to Cook at the District Mall location in downtown Kelowna, Kopets is hosting a celebration on Friday, June 27.
The festivities will include treats and samples, Ukrainian performances and music. The celebration will take place at the store, located at 565 Bernard Avenue, from 1-6 p.m.
